Kale Caesar Salad

Caesar salad is traditionally made with romaine lettuce, but this version uses delicious, healthy kale. With very little prep time needed, this recipe is ready in about 10 minutes.

Ingredients

  • 2 tablespoons hot water
  • 2 tablespoons light mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1/2 teaspoon anchovy paste
  • 1/2 teaspoon grated or very finely chopped garlic
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons grated Parmesan cheese
  • 1 tablespoon COFFEE-MATE® Original Flavor Powdered Coffee Creamer
  • 5 ounces baby kale (about 5 cups)
  • Whole-wheat croutons (optional)

Directions

WHISK together water, mayonnaise, lemon juice, anchovy paste, garlic and pepper in large bowl. Whisk in cheese and Coffee-mate Original Flavor Powder. Add kale; toss to coat. Top with croutons and additional cheese, if desired.
