Ingredients

  • 1/2 cup COFFEE-MATE® natural bliss® Vanilla All-Natural Almond Milk Coffee Creamer
  • 1/2 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon kosher salt
  • 2 1/2 cups old-fashioned oats
  • 1/4 cup raisins
  • 1/4 cup toasted sliced almonds

Directions

PREHEAT oven to 350° F. Line 12 muffin cups with paper or foil cupcake liners.

PLACE Coffee-mate natural bliss Almond Milk Creamer, almond milk, applesauce, eggs, butter, baking powder, cinnamon, nutmeg and salt in a large bowl. Whisk until fully combined. Add oats, raisins and almonds; stir to mix. Fill each liner with ¼ cup oat mixture.

BAKE for 25 minutes or until wooden pick inserted in cup comes out clean. Allow to cool for 10 minutes. Dust with powdered sugar before serving, if desired.
