Soy Chocolate Creamer, is good as hot cocoa too. My family loves it with marshmallows.

Yield: 4

Ingredients:

1/2 cup Splenda

3/4 cup Original NESTLÉ COFFEE-MATE Powdered Coffee Creamer

2/3 cup sugar

1/8 teaspoon xanthan gum (1/4 if making cocoa)

1/4 cup cocoa powder

4 cups soy milk

Instructions:

Note: I make this in my soy milk maker, so if you have one you can too.

Mix sugar, splenda, cocoa powder, xanthan gum (if using for hot cocoa add 1/4 tsp.) and creamer. Mix dry ingredients. Put soy milk in a pan and heat on medium, stirring constantly. With a wire whisk stir in powdered ingredients. Cocoa mix thickens when cooling. When serving as a cocoa drink the 1/4 tsp. makes it thicker when serving hot. Enjoy! Cocoa is good with marshmallows. This is good to sweeten your coffee.
