Vanilla Caramel Cake

Ingredients:
1 box caramel cake mix
3 large eggs
1/3 cup vegetable oil
1 1/3 cups Vanilla Caramel Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer
1 bag vanilla caramel marshmallows
1 container caramel icing
Non-stick cooking spray
Instructions:

Preheat oven to 350°F.

Spray a 9 x 13” pan with non-stick cooking spray and set aside.

Put cake mix, eggs, vegetable oil, and Coffee-mate into a medium bowl until mixture is smooth and creamy (about two minutes).

Spread mixture evenly in prepared pan.

Bake for 35 minutes.

Cut the marshmallows in quarters and spread them over the warm cake.

Return the cake to the oven and bake for an additional 10 minutes or until the marshmallows are melted.

Remove the cake from the oven and let it cool completely.

Top with icing.

Absolutely Yummy

While my 3 sisters were just here visiting, we made this cake, as I had printed the recipe several months ago. I needed a crowd to help eat this cake. It is absolutely delicious. I would definitely make it again - especially when asked to bring a dessert to some event. However . . . I did have difficulty finding the caramel cake mix itself - but was able to purchase it on-line from Meijer grocery market. I was able to find the caramel icing in one local store and the vanilla caramel marshmallows at Wal-Mart. I hope that is a flavor they continue to make and carry. Buon Appetito!
