Coffee Cake

This warm coffee cake with crumb topping is perfect for those special mornings.

Ingredients:

CRUMB TOPPING
1 cup chopped walnuts or pecans
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
6 tablespoons cold butter

CAKE
2/3 cup warm water
1/3 cup NESTLÉ COFFEE-MATE Powdered Coffee Creamer
2 cups all-purpose flour
1/2 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/3 cup butter
1 large egg

Instructions:

PREHEAT oven to 375° F. Grease 9-inch-square baking pan.

FOR CRUMB TOPPING:
COMBINE
nuts, granulated sugar, brown sugar, flour, cinnamon and butter in medium bowl. Mix with fork until mixture resembles coarse crumbs.

FOR CAKE:
WHISK
together water and Coffee-mate in small bowl until smooth. Combine flour, granulated sugar, baking powder, salt, cinnamon and butter in large mixer bowl. Beat by hand or on low speed with an electric mixer until flour is coated with the butter. Stir egg into butter-flour mixture. Gradually stir in Coffee-mate mixture.

SPOON half of batter into prepared pan. Sprinkle half of crumb topping over batter; spoon remaining batter over crumb topping. Sprinkle with remaining crumb topping.

BAKE for 30 minutes or until wooden pick inserted near center comes out clean. Cool in pan on wire rack for 15 minutes before cutting. Best served warm.

Very good recipe! I subsituted the nuts for chunks of chocolate and can not get coffee mate so used 2 tablespoons of instant coffee! Oh very good indeed!

Great texture, yummy flavor, and easy to make. I just couldn't get it out of the pan even though thoroughly sprayed. Make sure to spray thoroughly so cake will release from pan easily.

There are a few of us at work that take turns bringing something in for our birthdays. I love coffee cakes because they are not too sweet, so I searched on verybestbaking and picked this recipe. Well everyone should try this cake it is excellent and the whole group really enjoyed it.

Wake up at 6:00am on Sunday morning. Do your morning strectches. Freshen up and head to the kitchen. Prepare recipe as directed. Go get your Sunday paper. When you return make a pot of coffee. Sit at your kitchen table with a slice of your still warm coffee cake, a cup of coffee with Carnation Franch Vanilla coffee creamer and relax as your taste buds take you to heaven.

I made 2 this w/e, one to taste and the other to take to a bake sale. My mother-in-law loved it. She ate almost the whole cake. She said it was just like her grandmother used to bake. I thought it had a good flavor and was even better warmed in the microwave with butter on top. I thought that it could use more nuts, but I like lots of nuts. I used pecans in mine.
